Both dishes Ewan prepared today leaned towards a spicy profile to elevate the flavor. However, there was a very distinct difference between them. Eating crab required a bit more effort, demanding elbow grease to crack open the shell. The spicy kick clinging to the outside of the crab shell stood in stark contrast to the pure, refreshing sweetness hidden inside. The crab meat was flaky, velvety, and succulent. Upon entering the mouth, the meat separated into distinct, delicate fibers, feeling as though it were melting on the tongue.
